One of My Renditions of Crab Soup!



So today is Sunday and I KNOW I have to do some meal prep for the week.  On my way home from church, I wanted to go to the grocery store, but there was a lot of traffic out....thus I came home and opened the fridge, freezer and cabinets to see what I could put together.

Last night, I went out and had crabs and brought a few home; since I had some diced tomatoes in the cabinet I decided to make crab soup! Difficult you think? Not at all! Here's how I did it!

Crabs - washed 75% of the seasoning off (crabs are good, but the seasoning is very high in sodium) and broke off claws and legs then cleaned the body and picked the meat out.

Ingredients - Frozen mixed veggies, tomato paste, diced tomatoes and black beans. For my base, I did not have any beef bouillon cubs so I simmered some meatballs, onions and garlic together and it worked just fine.  Yes I used meatballs! I'm a country girl and we know how to use what we got to get what we want!  To season, I used rosemary, thyme, garlic powder, and nature's seasoning.

After simmering the meatballs, onions and garlic (in 1/3 pot of water), I added the diced tomatoes, tomato paste, black beans and mixed veggies. Bring this to a boil for 5 minutes and then simmer for 10 minutes. Next I added the crab to the pot and let simmer for 20 minutes to let all of the flavors infuse. Done!!!

I'm not a chef, I just have a passion for cooking and eating well!! :-) enjoy!!

Welcome!!!

Hello everyone and welcome to my blog!!!

I'm pretty new to blogging so bear with me! ;)

I created this blog to share some of my recipes that I love and those that have helped me along my weight loss journey. As you know, losing weight is not fun all of the time and neither is some of the food....which can ultimately make you lose your momentum to get healthy.  My goal is help keep you motivated in the kitchen so you can reach your health goals!!  

I also want to use this space as a place of encouragement for all that visit.  Losing weight is hard: mentally, physically and emotionally!  We need to lift each other up on our journeys to health.  There have been times where I have doubted myself and even felt like giving up, but I have a strong support system behind me that has pushed me every step of the way and refused to see me fail! 

Since we are FINALLY in the spring season (thank You Jesus), I will be posting some fun recipes that complement the season!!! Please stay tuned!!!
